Strawberry Shortcakes

Nothing says Summer eating to me like Strawberry Shortcakes and since it’s Canada Day Weekend here, I’m in a red and white mood and thought this would be the perfect sweet cap to the weekend.  I absolutely love this recipe, it’s super simple and rustic, which is code for fool proof!  The more ‘imperfect’ it looks, the better actually!

I completely embraced the rustic vibe of this recipe and used the ring of mason jar lids to cut my shortcakes.  I love the look of little round shortcakes piled high with strawberries and whip cream, but you can cut the shortcakes into squares too!  They taste amazing either way!

Cherry Custard Tart

Cherry Custard Tart

Happy Sunday friends!  For the first time in weeks, I’m back in the kitchen doing what I love – baking! And as promised my love affair with cherries continues with this easy Cherry Custard Tart.

While cherries are simply delicious on their own, this French inspired tart highlights them perfectly in a rather chic way.  The buttery crust is reminiscent of pie, but without all the work, which is why tarts are quickly becoming one favorite things to bake.  There is something so elegant about them, even if deceptively so, because they really are a cinch to make!  Enjoy!

Rhubarb Tart

My new found love of rhubarb continues with a delicious Rhubarb Tart.  Perhaps a somewhat more traditional use of rhubarb, it’s easy to make and friends and family will devour it, as did mine!  It’s the perfect cap to Sunday night dinner! Enjoy!
