When you think of St. Patrick’s Day you probably think of one of two things … the colour green or beer; since green beer is a thing at this time of year – perhaps you’re only thinking of one thing 😉 This year, I thought I would forgo the green food coloring and opt for a play on a classic, the Irish Coffee. Soft and chewy, these Irish Coffee Blondies are infused with classic flavours in two ways – ground coffee in the batter and Irish whiskey in the sugar glaze. Fresh ground coffee is best for the flavour, so if you have only ever used instant, you can check out some more information on grinding coffee from Mommysmemorandum or somewhere similar. My new found love of rhubarb continues with a delicious Rhubarb Tart. Perhaps a somewhat more traditional use of rhubarb, it’s easy to make and friends and family will devour it, as did mine! It’s the perfect cap to Sunday night dinner! Enjoy!
Happy Mother’s Day to all the Mothers and Mother figures out there! I am so grateful for all the amazing moms I have in my life who inspire, guide and push me to be the best and then comfort and support when things don’t turn out as I hoped, only to inspire and push me to try again. Blessed. I have been desperately wanting to try my had at these gorgeous Naked Cakes I’ve been seeing everywhere and what better occasion than Mother’s Day!
I must say this was not as difficult as I was expecting! While I do need to work on slicing the cakes to create two equal halves, overall I’m thrilled with how it turned out! And most importantly, I think my Mom is going to love it!
