Left overs are always my favorite part of Thanksgiving – turkey sandwiches, the next day – are the best!  As our friends south of the border get over their turkey hanger-overs I thought I would share one of my favorite Thanksgiving leftover recipes – Cranberry Turnovers.

Most of us probably find ourselves with leftover cranberry sauce the morning after the big turkey dinner.  This year I had some leftover pie dough as well and thought what better to use both up than super easy and festive cranberry turnovers.  Light and flaky, I bet you can’t have just one 😉 If unlike me you weren’t left with extra pie dough, not to worry, puff pastry works really well too.

Pumpkin Cinnamon Knots

Is there anything more comforting than cinnamon buns and a fresh cup of coffee in the morning?  How about Pumpkin Cinnamon Knots? Similar to cinnamon buns, but with a pumpkin twist.   These soft pillowy clouds, aren’t just tasty pumpkin delights, they look like little pumpkins too!  Which is precisely why I had to make them.

Best fresh out of the oven, topped with a little butter and paired with your favorite cup of coffee or tea.  The recipe is a bit involved, but it is so worth it!  Don’t be intimidated by the cutting and twisting, it’s actually a lot of fun and easy to do!  Enjoy!

Pumpkin Spiced Cookies

One look at this blog and you can tell I’m a huge fan of pumpkins.  Shockingly though I don’t care for the PSL (Pumpkin Spiced Latte) I think it’s because I’m a bit of purest when it comes to coffee: dark, strong and black; I’d much prefer to eat something sweet as opposed to drink it.  But give me pumpkin spiced cookies, cakes or scones, and I’m all over them.

In honor of National Pumpkin Day, I thought I would share the perfect mid-week treat – Pumpkin Spiced Cookies.  Super easy and great to toss into the freezer to have on hand when a craving hits.  Because I like to freeze treats and enjoy them as needed, I chose not to glaze my cookies, but a simple glaze of confectioners sugar adds a touch more sweetness and makes them a little fancier 😉
