Irish Coffee Blondies

When you think of St. Patrick’s Day you probably think of one of two things … the colour green or beer; since green beer is a thing at this time of year – perhaps you’re only thinking of one thing 😉 This year, I thought I would forgo the green food coloring and opt for a play on a classic, the Irish Coffee. Soft and chewy, these Irish Coffee Blondies are infused with classic flavours in two ways – ground coffee in the batter and Irish whiskey in the sugar glaze. Fresh ground coffee is best for the flavour, so if you have only ever used instant, you can check out some more information on grinding coffee from Mommysmemorandum or somewhere similar. The perfect sweet treat for the holiday. Enjoy!

Cinnamon Roll Bread

Is there anything better than fresh homemade cinnamon rolls in the morning with a nice (strong) cup of coffee?  Nope, I can’t think of anything either! But the work that goes into traditional cinnamon buns can sometimes make having them in the morning a bit of a challenge, which is why when I discovered Julie Blanners Cinnamon Roll Bread, I knew I had a winner on my hands. So much easier than traditional cinnamon buns, but all the same comforting flavours.

Julie swears the magic is in the swirling, I’m convinced it’s in the icing 😉 Enjoy!

Valentine's Linzer Cookies

Looking for the perfect, from the kitchen treat for your Valentine? Look no further, these Valentine’s Linzer Cookies are just the ticket.  Easy to make and delicious, your Valentine is sure to be impressed.

Linzer cookies are a play on the Linzertorte, an Austrian treat believed to have originated in the 1700s.  The torte traditionally consists of a crust made of ground almonds and filled with black currant jam.  Linzer cookies take two almond flavoured butter cookies and sandwich them together with a layer of jam.  While any jam will do, I choose raspberry, since it is the season of love 😉  Truth be told, I actually made raspberry jam with the intention of using it in these cookies.  But what I didn’t consider were the seeds!  Not the most palatable, so store bought seedless raspberry jam is what I ended up using.
