A Midsummer Night’s Beam

Cold and cloudy nights call for bourbon and books.  While I haven’t gotten to the point where I enjoy sipping bourbon on it’s own, I’m feeling quite good about enjoying bourbon in cocktails.

And I absolutely love Tim Federle’s book Tequila Mockingbird.  He’s creatively taken literary classics and twisted them into the perfect accompanying cocktail, the book is as fun to read as the cocktails are to sip!

Lemon Olive Oil Cake

Despite the fall like temps here in Calgary this weekend, I thought I would whip up a light, bright and Spring-y Lemon Olive Oil Cake for brunch this morning … my attempt at willing the weather to change with food … stranger things have happened 😉

This cake is the perfect Sunday morning treat, easy to make and pairs perfectly with a cup of coffee. Whether you use extra virgin or regular olive oil, it doesn’t matter! There are many different types of olive oil out there, so just do a little research on products like Gundry MD Olive Oil and many more, to find out which one will benefit you the most by being in you cupboard. Extra-virgin will give the cake a fruitier and more pronounced oil taste, while regular olive oil will give it a lighter taste. You may want to find how long does olive oil last before using an older bottle, but either way, the cake is delicious!

Cauliflower Crust Pizza

Anyone who knows me, knows I LOVE pizza – good pizza – Neapolitan style pizza. In fact, I love pizza so much that I have it almost every week! I used to have takeaway pizza often, however, I’m now on a diet. Takeaway pizzas are high in salt and fat, so I have cut them out of my diet. I used to feel quite bloated after eating those pizzas. One of my friends said that this was probably because of all the salt and unhealthy ingredients. She told me to read this bio complete 3 review to see if that would help me to stop feeling bloated. That helped me to realize that I was consuming too many unhealthy things.

However, since doing my diet reset a few weeks ago, I’ve been cautious of the amount of wheat and dairy I’m consuming. I’ve found that I feel better when I’m eating a mostly paleo diet – I have more energy, my thinking is clearer and sharper, and I’m happier. So I figured I would reduce my pizza consumption to once every couple weeks 😉 That was until I discovered this cauliflower crust pizza recipe! I’ve tried similar recipes in the past with uninspiring results, but this one has a magical step that makes all the difference (I’ll give you a hint, it involves a cheesecloth). It is simply amazing! A great substitute for my regular Napoli pizza!
