Lemon Olive Oil Cake

Despite the fall like temps here in Calgary this weekend, I thought I would whip up a light, bright and Spring-y Lemon Olive Oil Cake for brunch this morning … my attempt at willing the weather to change with food … stranger things have happened 😉

This cake is the perfect Sunday morning treat, easy to make and pairs perfectly with a cup of coffee. Whether you use extra virgin or regular olive oil, it doesn’t matter! There are many different types of olive oil out there, so just do a little research on products like Gundry MD Olive Oil and many more, to find out which one will benefit you the most by being in you cupboard. Extra-virgin will give the cake a fruitier and more pronounced oil taste, while regular olive oil will give it a lighter taste. You may want to find how long does olive oil last before using an older bottle, but either way, the cake is delicious!

Butter Toffee Cookies

The other night while watching Master Chef Canada I was shocked to see a baking challenge using Becel Margarine!  Margarine?!  The contestants were of course able to create beautiful, inspiring and delicious dishes using margarine, but I just couldn’t wrap my head around it.  The only time I would ever bake with margarine is if there was a world-wide shortage of butter.  To me baking and butter are synonymous.

Even after my Spring Reset and renewed awareness of how different foods affect me, I can’t give up baking without butter!  Everything in moderation, right?! 😉  Although I dare you show moderation around these delicious Butter Toffee Cookies!

Valentine Sugar Cookie Cakes

IMG_6802 Is there anything more lovely than heart shaped ramekins?

Ramekins of all kinds are one of my absolute favorite things, there is something so special about making individual servings, it takes an already amazing recipe and elevates it instantly.

And speaking of amazing recipes, this Sugar Cookie Cake is just that.  The cake is amazing on it’s own, baked in tart pans, pie dishes, a 1/4 cookie sheet or a pizza pan, but when I spied these adorable heart shaped ramekins at Michaels, I knew they would be perfect for this recipe on Valentine’s Day, topped with pink and red Smarties.
