Valentine's Linzer Cookies

Looking for the perfect, from the kitchen treat for your Valentine? Look no further, these Valentine’s Linzer Cookies are just the ticket.  Easy to make and delicious, your Valentine is sure to be impressed.

Linzer cookies are a play on the Linzertorte, an Austrian treat believed to have originated in the 1700s.  The torte traditionally consists of a crust made of ground almonds and filled with black currant jam.  Linzer cookies take two almond flavoured butter cookies and sandwich them together with a layer of jam.  While any jam will do, I choose raspberry, since it is the season of love 😉  Truth be told, I actually made raspberry jam with the intention of using it in these cookies.  But what I didn’t consider were the seeds!  Not the most palatable, so store bought seedless raspberry jam is what I ended up using.

Prosecco Cake

Call me crazy, but I prefer to ring in the New Year quietly. Ideally at home, with a few friends, a partner (should there be one in my life at the time) or even, alone. No crazy parties, loud music or making small talk for me. Calm, quiet and intentional.

Why am I talking about New Years Eve nearly half way through January? Because I’ve got celebration and cake on my mind!

I’m getting ready to head down to Las Vegas to celebrate my girlfriend’s bachelorette, a weekend I planned and have been anxiously awaiting to see come together. Truth be told, I feel far too old to be planning a bachelorette, much less in Las Vegas! But alas, that’s where I find myself. While there will be much more on the bachelorette to come on the blog, for today, I’m sharing this delicious and might I say gorgeous Prosecco Cake.

Cranberry Turnovers

Left overs are always my favorite part of Thanksgiving – turkey sandwiches, the next day – are the best!  As our friends south of the border get over their turkey hanger-overs I thought I would share one of my favorite Thanksgiving leftover recipes – Cranberry Turnovers.

Most of us probably find ourselves with leftover cranberry sauce the morning after the big turkey dinner.  This year I had some leftover pie dough as well and thought what better to use both up than super easy and festive cranberry turnovers.  Light and flaky, I bet you can’t have just one 😉 If unlike me you weren’t left with extra pie dough, not to worry, puff pastry works really well too.
