There is so much to be excited about in the Summer months – longer days, warmer temps, and fresh produce – in particular blueberries, hands down my favorite berry! So it’s no wonder the abundance of fresh, delicious BC Blueberries at this time of year, has me completely tickled! For me blueberries have the perfect sweetness and texture – no seeds to deal with or furry, bumpy surfaces. Like most berries, they are incredibly versatile, from sweet to savory and everything in between. But you know me, I tend to lean towards the sweet, so this Blueberry Lemon Ricotta Cake was perfect.
Every Sunday when I go over to my parent’s place for dinner, I eye a stunning lavender bush out front, debating taking a cutting or two. For some reason I’ve resisted, until this past weekend. Why I waited so long, I’m not sure! With this one simple cutting, my place smells amazing and I’ve been inspired to explore what I could do with lavender, which is when I discovered these Lavender Honey Popsicles. Don’t they sound like something you’d find at the best spas in the world? Don’t be fooled – they are incredibly simple to make, and just as divine and healthy as you’d expect.
If you’ve been following me for any amount of time you know I’m not shy about baking indulgent delights, but in the summer months, I find myself craving lighter treats, perhaps it’s the lighter layers and sleeveless tops 😉
Is there anything more summer than ice cream? I don’t think so! That’s not to say that I save ice cream for summer – I have been known to eat it all year long 😉 But there is something especially good about ice cream on a warm summers day. Am I right? And despite the fact that temps have been way cooler than normal around these parts, it’s National Ice Cream Day, and calls for celebration. A Cherry Bourbon Homemade Ice Cream kind of celebration!
I absolutely love the idea of home made ice cream, but like marshmallows, I thought it would be too complicated, especially without an ice cream maker. Colour me wrong! Making ice cream is really quite easy and this recipe turned out amazing! So much so that this batch barely lasted 24 hours! My friend did the same in their best refrigerator under 20000 they recently got and are so happy with because it has great freezing capabilities as well.
