Lavender Honey Popsicles

Every Sunday when I go over to my parent’s place for dinner, I eye a stunning lavender bush out front, debating taking a cutting or two. For some reason I’ve resisted, until this past weekend. Why I waited so long, I’m not sure!  With this one simple cutting, my place smells amazing and I’ve been inspired to explore what I could do with lavender, which is when I discovered these Lavender Honey Popsicles.  Don’t they sound like something you’d find at the best spas in the world? Don’t be fooled – they are incredibly simple to make, and just as divine and healthy as you’d expect.

If you’ve been following me for any amount of time you know I’m not shy about baking indulgent delights, but in the summer months, I find myself craving lighter treats, perhaps it’s the lighter layers and sleeveless tops 😉

I know lavender for it’s relaxing properties in essential oils.  I have a beautiful lavender infused oil I picked up in Rome last year that I use on my cuticles every night.  But the thought of ‘cooking’ with it was new to me.  In these lavender honey popsicles it not only adds an amazing fragrance, but a earthiness that pairs perfectly with the tartness of the yogurt and sweetness of the honey.  These popsicles feel like a fancy, grow up version of a simple childhood favorite.  Something you could easily serve at your next backyard party.

Ingredients

¾ cup whole milk
6 tablespoons honey
2 tablespoons lavender flowers
2 cups plain, Greek yogurt
Red and Blue food coloring (optional)
Popsicle Mold

Directions

In a small saucepan, combine the whole milk, honey, and lavender flowers. Set over low heat until the milk begins to scald, stirring occasionally. Remove from heat and allow to sit for 2 hours.

Strain milk mixture through a fine mesh sieve to remove lavender flowers, saving the milk. Add yogurt into infused milk. Without food colouring the popsicles will be cream in colour, if you’d like to give them a lavender hue, add in red and blue food coloring, one drop at a time, until desired color is reached.

Pour into 6 popsicle molds and freeze for 1-2 hours before adding popsicle sticks, return to freezer and freeze for at least another 3-4 hours, preferably overnight. When ready to eat popsicles, place under hot water for 10-15 seconds to help loosen the popsicle from the mold. Enjoy!
