Pumpkin Cheesecake

In an effort to change things up and exercise portion control, this year we’re celebrating Thanksgiving with individual mason jar Pumpkin Cheesecakes.  While I’m only half joking about the portion control, I just knew I wanted to do a dessert in these darling mini mason jars when I first spied them.  And these cheesecakes are the perfect Holiday treat for them, light, fluffy and bursting with seasonal flavours.

Now before you convince yourself that making mini cheesecakes is going to be too much work, I assure it’s not.  It’s the same process as a regular cheesecake, with just a few extra minutes required to fill the jars individually. Since mason jars lend themselves to a rustic feel, no skill or perfection required!  And let’s be honest, individual servings instantly make a dessert appear so much fancier than it is 😉 However, if you don’t have mini mason jars, I’ve included steps to make a regular 9-inch cake as well, I wouldn’t want you to miss out!

Blueberry Lemon Ricotta Cake

There is so much to be excited about in the Summer months – longer days, warmer temps, and fresh produce – in particular blueberries, hands down my favorite berry!  So it’s no wonder the abundance of fresh, delicious BC Blueberries at this time of year, has me completely tickled!  For me blueberries have the perfect sweetness and texture – no seeds to deal with or furry, bumpy surfaces.  Like most berries, they are incredibly versatile, from sweet to savory and everything in between.  But you know me, I tend to lean towards the sweet, so this Blueberry Lemon Ricotta Cake was perfect.

Estonian Kringle

Estonian Kringle

It’s another gloomy Sunday here in Calgary and despite this being the first weekend of the Greatest Outdoor Show on Earth, the Calgary Stampede, I’m feeling like cozying up and staying inside with a comforting treat, like this Estonian Kringle.

I first discovered the Estonian Kringle on Instagram, when fellow designer, blogger and avid baker, LemonTree Interiors shared her Kringle – it was intricately beautiful and made of cinnamon – I just had to give it ago.

A Kringle is a traditional sweetbread made with cardamom, saffron, raisins or cinnamon and twisted into the shape of a pretzel. It’s considered mandatory in Estonia for birthdays, weddings, and other special occasions – a Canadian in the Wimbledon Final and the Euro 2016 Final all in one day was special enough for me!
