There is something so comforting about a warm piece of banana bread, especially on a gloomy day like today.
What I love most about banana bread is that it’s a great way to use up the stash of over-rip bananas in my freezer, it travels really well (very shareable ;-) and it can be frozen for a lovely snack for another time or when company stops by at the last minute – you’ll look like the hostess with the mostess with minimal effort :-)

Ingredients
1/2 cup butter
3/4 cup sugar
2 eggs, beaten
4 bananas, mashed
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
Optional: 1 cup walnuts or chocolate chips
Directions
Cream together the butter and sugar. Add the eggs and mashed bananas and combine well.
Sift together flour, baking soda and salt and add to creamed mixture. Add vanilla and nuts or chocolate chips if using and mix until just incorporated, be sure not to over-mix.
Pour into a greased and floured loaf pan and bake at 350 degrees for 60 minutes or until a toothpick inserted into the center comes out clean. Let the bread cool slightly in the pan and then enjoy!
Wrap the leftovers in plastic wrap and store in the refrigerator or freezer.
