With one of the longest winters behind us – finally – I’m craving some light and fruity flavours. And with the weekend a mere hours away, my mind’s on cocktails. If you read my post on creating an elegant and easy Parisian Brunch, you know that I owe you a cocktail for brunch. And have I got the perfect one! My Gin and Jam Fizz, is easy, fruity and perfect for brunch.
I partnered with E.D. SMITH on the Parisian Brunch post and in the process discovered the magic of adding jams to cocktails. Jams are an easy alternative to simple syrup, they are flavourful and a great way to use fruit that isn’t in season yet. I chose to use E.D. SMITH Tripe Fruits Peach Mango and Orange, but you could use any jam you’d like for this cocktail, the Raspberry Strawberry and Blackberry would be delicious as well!
As of late, I’ve really fallen in love with herbs in cocktails. They add an elegant earthiness that often cuts the sweetness just right. This cocktail calls for thyme, which pairs beautifully with the freshness of peach.
Ingredients
1 Tablespoon E.D. SMITH Tripe Fruits Peach Mango and Orange
1 Teaspoon Fresh Thyme Leaves
1 Ounce Gin
Prosecco
Directions
Combine peach jam, thyme, and gin in and cocktail shaker and muddle to allow the thyme leave to release their flavour. Add ice and shake for 20 seconds. Pour into a cocktail glass with ice, top with Prosecco. Garnish with thyme and a flower of your choice and enjoy!
