I love simple cookies around the holidays, probably because some of my favorite moments over the holidays are those shared over a cup of chai (traditional Indian tea) with my family. So a cookie that pairs well with chai, or coffee is always a winner.
And this unassuming Almond Snowball Cookie is no exception! Simple, delicious and incredibly addicting, it’s impossible to have just one – trust me I know! These have quickly become one of our favorite holiday cookies, I can’t wait for you to try them!
Ingredients
1 1/2 cups unsalted butter
1 cup confectioners sugar, plus 1/3 cup, for dusting
3/4 tsp salt
1 cup finely ground almonds
3 tsp vanilla extract
2 tsp almond extract
3 cups sifted all-purpose flour
Directions
Preheat oven to 325 degrees F.
Cream butter in a bowl. Gradually add confectioners sugar and salt. Beat until light and fluffy.
Add almonds, vanilla and almond extract. Blend in flour gradually and mix well. If dough is too sticky add a bit more equal parts flour & confectioners sugar.
Shape into 1″ balls Place on parchment lined cookie sheets, and bake for 15 to 20 minutes. Do not brown.
Cool slightly and dust with confectioners’ sugar. And enjoy!
